BLUEBERRY pancakes

This scrumptious gluten free, blueberry pancake recipe is super easy to make and is sure to be a big hit at your next brunch gathering. A recipe the whole family will love. Made with organic bananas and giant COASTAL MOON Blueberries.

TOTAL TIME: 15 MINS

PREP TIME: 10 MINS

COOK TIME: 5 MINS

DIFFICULTY: EASY

INGREDIENTS:

Avail. @ Whole Foods, Good Eggs, Earl’s Organic Produce

  • 2 organic bananas

  • 4 organic eggs

  • Tablespoon of coconut oil

DIRECTIONS:

In a large bowl, mash the bananas and the blueberries until they reach a liquid state.

 

  1. Whisk in the eggs.

  2. Heat coconut oil in a large skillet over medium heat.

  3. Pour batter into the warm skillet to cook. Garnish with desired number of blueberries. After about a minute and a half (or until golden) flip to finish cooking.

  4. Allow to cool for a minute. Serve warm.
